Since the Calgary Stampede ended today, I've decided to write a post about Cowboy Breakfasts, which are the most popular kind of meal at the Stampede (there are free Cowboy Breakfasts everywhere right now). But I'm writing one on making pancakes first, because that's one of the most important parts. Of course, you could just do it the easy way and buy pancake mix, but if you want it homemade, I got this recipe off
http://allrecipes.com/Recipe/good-old-fashioned-pancakes/detail.aspx. It's a recipe for a plain, ordinary pancake: the kind we eat at Stampede.
Ingredients:
1 1/2 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Directions:
- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
The good thing is that you don't have to be exact at all with pancakes. So it doesn't really matter if you accidentally pour in a bit too much flour, or use 2 tablespoons of butter instead of 3.
And it doesn't really matter how to cook the thing, as long as the result looks more or less like this.
